I had chili left over from last nite.

 

 

 

Chili

 

 

 

½ pkg Gimme Lean ground beef style (about 7 oz)

 

1 green pepper, chopped

 

1 onion, chopped

 

3 stalks celery, chopped

 

4 jalapenos, chopped

 

6 cloves garlic, minced

 

1 can fire roasted tomatoes, diced

 

1 can fire roasted green chilis, chopped

 

3 cups mixed beans (soaked)

 

½ jar pasta sauce (I threw this in cuz it was left over in the fridge

and I wanted to get rid of it)

 

chili powder

 

cumin

 

cayenne

 

crushed red pepper

 

olive or vegetable oil

 

 

 

Saute the Gimme Lean along with the peppers (bell and jalps), onions and

garlic until slightly browned. Add tomatoes, chilis and pasta sauce (or

use plain tomato sauce). Stir in the beans (I used a combination of

black, kidney, canellini, pinto and small red beans, because the varied

colours look so nice, but any beans you want are fine, even canned.)

 

 

 

Season to taste and let simmer. The longer it cooks the yummier it

gets, just add water if it gets too thick. Sprinkle with grated cheese,

diced onions, or whatever condiments you like.

Yum. i'm sure you've noticed this, but chili

and soups always taste better the second day.

Thanks for sharing your recipe; i need to

keep a lookout for the fire roasted tomatoes.
