This is for lunch here today.

What is everyone else having?

 

Egg Salad & Cucumber Sandwich

 

3 hard-cooked eggs, chopped

1/2 cup finely chopped green pepper

1/4 cup mayonnaise

2 Tbs finely chopped red onion

1/2 tsp lemon juice

1/8 tsp salt

1/8 tsp pepper

8 slices whole wheat or rye Bread

1 small cucumber, thinly sliced

Lettuce leaves

 

In a bowl, combine the eggs, green pepper, mayonnaise,

onion, lemon juice, salt and pepper. Spread on four slices

of bread. Top with cucumber and lettuce. Top with remaining

bread slices.

Yield: 4 sandwiches
