It is so easy to make and tastes only better the next day~ if there is any leftover! i enjoy zipping it up with a few shakes of hot sauce on top of my serving. Calico Corn Salad 1 package (16 oz.) frozen corn, thawed 2 small zucchini, diced 1/2 large sweet red pepper, diced 1 can (4 oz.) chopped green chilies, drained 1 small onion, chopped 1/3 cup olive oil 2 Tbs. fresh lime juice 1 Tbs. red wine vinegar [or cider vinegar] 2 tsp. ground cumin 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. garlic powder In a bowl, toss corn, zucchini, red pepper, chilies, and onion. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Pour over vegetables and stir to coat. Chill for several hours or overnight.
