brined, pickled, juice stewed....

Not sure what it is called when a meat is

cooked in a brine but since this is a

vegetarian list maybe the answer would

be best asked on a " seafood " [sealife] cooking

list. When i was living in Hawaii there was a

popular dish of brine-cooked salmon they

called Lomi-Lomi Salmon.

No, no, that's not what I'm talking about. I'm not talking about seafood or

meat, or even about cooking- I'm specifically asking of there's an umbrella term

for preparing *without* cooking- pickling in vinegar, or preserving in brine.

 

For instance, when we go to Mexican restaurants here, they often bring to the

table a bowl of pickled vegetables- carrots, onions, and jalapenos. These

veggies are still crispy (in fact, the carrots are somewhat HARD) so they

haven't been cooked, but they've certainly been *prepared*.

 

I dunno, maybe " pickled " is as technical as it gets in this instance :)

i love escabeche! that's the mexican pickled veggies.

i've made it before. the veggies aren't cooked, but

the pickling brine (vinegar and spices) is heated

until very hot and then poured over the veggies.

 

i think that would be considered pickling.

 

mmmm....thinking i might have to make a batch of

escabeche!
