I'm not talking about seafood or meat, or even about cooking- I'm specifically asking of there's an umbrella term for preparing *without* cooking- pickling in vinegar, or preserving in brine. For instance, when we go to Mexican restaurants here, they often bring to the table a bowl of pickled vegetables- carrots, onions, and jalapenos. These veggies are still crispy (in fact, the carrots are somewhat HARD) so they haven't been cooked, but they've certainly been *prepared*.
