You start them in the morning when the kitchen is cool and slow cook them in a crockpot so the kitchen stays that way thru the day. You don't have to watch them like a hawk as crockpots allow you to be outdoors enjoying the sunshine. Baked Beans for Crockpot 3 cups dried Great Northern beans 1 large onion, chopped 1 medium green bell pepper, chopped 3/4 cup ketchup 1 Tbs. prepared Dijon mustard 1 tsp. liquid smoke 1/2 cup packed brown sugar 2 heaping teaspoons instant coffee dissolved in 2 Tbs. hot water 1/2 cup molasses 1 cup water [more as needed during cooking] Salt and Pepper to taste Place beans in a large pot or saucepan and cover with water. Heat to boiling on the stove over high heat. Reduce the heat to medium and cook 10 minutes; drain. Add the beans to the crockpot. Add the remaining ingredients except for the salt. Cook on high for 6 hours or until the beans have absorbed the liquid and soften, check to add more water as needed. Season with salt and more pepper before serving.
