Fresh salsa is nice with this as well (but I didn’t have time to make any). “Chik’n” Fajitas 1 package LightLife Smart Menu Chick’n Strips 1 yellow squash, julienned ½ red pepper, julienned ½ green pepper, julienned 2 jalapeno peppers, diced 3 green onions, diced 4 cloves garlic, minced ½ cup black beans (this is how much I had leftover in the fridge, use more or less according to your taste) 1 lime 1 tablespoon dried cilantro leaves 1 tablespoon chili powder 1 tsp cayenne pepper Guacamole (recipe follows) Shredded cheese (I used a “Mexican” blend of 4 cheeses) Vegetable oil spray Tortillas (corn or flour, whatever size you prefer) Marinate the chick’n strips in the juice of 1 lime plus the cilantro, chili powder and cayenne. The longer it sits, the more lime flavour the chick’n soaks up. Spray a non-stick pan with vegetable oil spray, and heat. Sautee chick’n strips with veggies until everything is tender but not mushy. Spread a generous amount of guacamole on a warmed tortilla, top with the chick’n and veggies, and sprinkle with cheese. Wrap up and enjoy. Guacamole 2 ripe avacados 1 plum tomato, seeded and diced 3 green onions, diced 1 lime 1 tbsp dried cilantro ½ tsp salt 3 cloves garlic, crushed Mash the avacados.
