Here’s what we had: Pasta and Veggies ½ zucchini, sliced ½ summer squash, sliced ½ red pepper, chopped ½ cup black beans ½ onion, diced 3 cloves garlic 1/3 bad Quorn chick’n tenders 1 can fire roasted crushed tomatoes Italian seasoning Basil Crushed red pepper Olive oil Penne pasta Heat the olive oil and sautee the veggies. Add the black beans, tomatoes, chick’n tenders and spices, and simmer. While the veggies simmer cook the penne al dente. Toss pasta with veggies. Enjoy!
