[recipe] Pasta and Veggies

Tonite’s dinner was a “throw together” of bits and pieces of things in

the fridge. Here’s what we had:

 

 

 

 

 

Pasta and Veggies

 

½ zucchini, sliced

 

½ summer squash, sliced

 

½ red pepper, chopped

 

½ cup black beans

 

½ onion, diced

 

3 cloves garlic

 

1/3 bad Quorn chick’n tenders

 

1 can fire roasted crushed tomatoes

 

Italian seasoning

 

Basil

 

Crushed red pepper

 

Olive oil

 

Penne pasta

 

 

 

Heat the olive oil and sautee the veggies. Add the black beans,

tomatoes, chick’n tenders and spices, and simmer. While the veggies

simmer cook the penne al dente. Toss pasta with veggies. Enjoy!

 

 

 

I think this would be good with a sprinkle of freshly grated parmesan

cheese too, but we didn’t have any of that laying around.

That sounds really yummy and i love the simplicity

of it. Proof again we can all fix something fast, delicious

and healthy in a matter of minutes. :)
