Bravo! Here is the recipe reposted for everyone else. It can be found in the files section in the main dishes folder, but i thought i would dig it out. There are so many wonderful tried and true recipes stored in there so if you haven't before do take a look. It is an awesome resource. ~ PT ~ Italian Throw Together Dinner ~ By Sherri Last nite was one of thos " throw together " nights, whee I just pulled stuff out of the cupboards/fridge and tossed it all together. It turned out quite tasty. Here's what I used: 1 zuccini, chopped 1/2 red pepper, chopped 1/2 yellow pepper, chopped garlic (maybe 4 or 5 cloves, minced) 1 can canellini beans most of a jar of pasta sauce 1 small package of cheese tortollini italian seasoning olive oil I sauteed the zuccini, peppers, garlic and italian seasoning in the olive oil for a few minutes, then poured the sauce over and stirred in the beans. In the meantime, in a separate pot, I cooked the tortellini. Add the drained al dente pasta to the rest, and stir to coat with sauce. Simmer for s short while longer, to make sure flavours are well blended, and serve hot. This was really easy, had lots of great colours and textures, and was quite filling.
