When i tried it i adjusted the ingredients and quantity of hot sauce to suit my taste ~ so here is what i came up with. It was very delicious and will definately serve it again. Corn Casserole 1 large onion, chopped 2 medium green peppers, chopped 3 cloves garlic, minced 1/2 cup butter or margarine 1/4 cup all-purpose flour 2 cups canned or frozen corn 2 cups cooked rice 1 can (14.5 oz. ) diced tomatoes, undrained 4 hard-cooked eggs, copped 2 1/2 cups shredded cheddar cheese, divided 2 Tbs. Worcestershire sauce* 1 Tbs. [or to taste] hot pepper sauce 2 tsp. salt 1 tsp. pepper In a large skillet, saute onion, peppers and garlic in butter until tender. Stir in flour. Remove from heat; add remaining ingredients except for 1/2 cup cheese. Pour into a greased 2 1/2 quart baking dish. Bake, uncovered, at 350û for 45 minutes. Top with remaining cheese; let stand 5 minutes. Yield: 10 to 12 servings [as a side dish] * Yes, you can find vegetarian versions of Worcestershire sauce. You have to carefully read the labels to make sure that anchovies are not in the ingredient list. I use a brand called Kroger. ~ pt ~ He became a silvan man just as though devoted to the woods.
