Guest guest Posted May 25, 2004 Report Share Posted May 25, 2004 As promised here is one I enjoy: Black Bean Fiesta Salad 1 can (15oz) black beans, rinsed and drained 1 cup frozen corn, thawed 1 green pepper, diced 1 sweet red pepper, diced 1 cup diced red onion 2 celery ribs, chopped 3/4 cup cubed Monterey Jack cheese 3 Tbs lemon juice 3 Tbs red wine vinegar 2 Tbs olive oil 2 garlic cloves, minced 1 Tbs Italian seasoning 1 tsp pepper 1/2 tsp ground cumin In a large bowl, combine beans, corn, pepper, onion, celery and cheese. In a jar with a lid, combine the remaining ingredients; shake well. Pour over vegetable mixture and toss gently. Cover and chill for 2 hours or overnight. Yield: 6 servings This is really delicious. Often I omit the cheese until right before serving and then leave it in a dish on the side for those who want it~ I find the cheese isn't really needed and just gets soggy when put in the salad during marinating. This is wonderful served with fresh lettuce greens, some torilla chips and guacamole.
