As promised here is one I enjoy:

 

Black Bean Fiesta Salad

 

1 can (15oz) black beans, rinsed and drained

1 cup frozen corn, thawed

1 green pepper, diced

1 sweet red pepper, diced

1 cup diced red onion

2 celery ribs, chopped

3/4 cup cubed Monterey Jack cheese

3 Tbs lemon juice

3 Tbs red wine vinegar

2 Tbs olive oil

2 garlic cloves, minced

1 Tbs Italian seasoning

1 tsp pepper

1/2 tsp ground cumin

 

In a large bowl, combine beans, corn, pepper,

onion, celery and cheese. In a jar with a lid,

combine the remaining ingredients;

shake well. Pour over vegetable mixture

and toss gently. Cover and chill for 2 hours or

overnight.

Yield: 6 servings

 

This is really delicious. Often I omit the cheese until

right before serving and then leave it in a dish on the

side for those who want it~ I find the cheese isn't

really needed and just gets soggy when put in the

salad during marinating. This is wonderful served

with fresh lettuce greens, some torilla chips and

guacamole. Mmmm
