This looks really refreshing. I think he's right though. I don't see a ton of recipes that call for soybeans. I tend to just toss them into things as I feel like it, but I do wonder why there aren't more recipes for them. Laura ---------------------- Edamame Salad Serving Size : 4 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces soybeans -- frozen shelled 8 ounces baby lettuce leaves 1 fuji apple -- thinly sliced 1/4 cup golden raisins 3 tablespoons soy sauce 2 tablespoons fresh lime juice 1 tablespoon vegetable oil Cook soybeans in boiling water according to package directions. Drain and cool. In large bowl, combine lettuce, apple slices and golden raisins. In small bowl, mix together soy sauce, lime or lemon juice and oil. Drizzle over salad, and serve.
