Guest guest Posted May 14, 2004 Report Share Posted May 14, 2004 Chimichangas Recipe By :Sue Spitler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- garlic-olive oil cooking spray 3/4 cup onion -- chopped 1 1/2 teaspoons garlic -- minced 1 1/2 cups frozen prebrowned all-vegetable protein crumbles -- thawed 2 tablespoons water 1 teaspoon taco seasoning mix -- to 2 teaspoons 8 flour or corn tortillas -- warm 1 1/2 cups shredded fat-free cheddar or monterey jack cheese 1/2 cup hot or mild prepared salsa 1/2 cup fat-free or reduced-fat sour cream Spray medium skillet with cooking spray; heat over medium heat until hot. Saute onion and garlic 2 to 3 minutes; stir in protein crumbles, water, and taco seasoning. Cook over medium heat until hot through, 2 to 3 minutes. Spoon mixture onto tortillas; top with cheese, salsa, and sour cream. Roll up and fold one end for eating. Anyway, this one is a real quickie and easy for people who don't cook much or don't have much time. Also, an easy way to steam tortillas is to put them on a plate with a slightly damp paper towel over them. Then microwave for 30-45 seconds until warm.
