I live in Portland, Oregon, before that Santa Cruz, California, and before that, San Pedro, California. I'm seriously thinking about becoming a vegan and have been thinking about it for a while, but haven't taken the plunge. Seeing Nick Berg get decapitated got me thinking about how everything is connected and how that is exactly what happens to animals every day in this country. (I hope these remarks don't get me into too much trouble here. I know we're not really supposed to talk about politics). Anyway, I just started feeling so despondent about the state of this crazy world and changing my diet seemed like one small thing I could do to feel like I'm contributing (or at least not destroying). I'm proud of being a vegetarian my whole life but I feel like I'm very close to switching to veganism. By the way, I made a recipe that was posted here a while back (I think courtesy of PT) for Thai Pinapple Rice. Delicious! I wanted to share a few of the changes I made. I didn't have any pineapple chunks so instead I cooked the rice in pineapple juice. I also toasted the cashews in the oven and sauteed the veggies (I used cabbage instead of the peppers because that's what I had in the fridge). I made it into more of a fried rice dish than a rice salad. It was great, so thank you so much! Finally, what is a dh? I can't figure it out for the life of me.
