I am PT, a lacto-ovo vegetarian that currently lives in southern Oregon on the west coast of the USA. Living in Spain must be wonderful. I sure understand why the last thing you'd want to see, let alne eat, is a lump of meat given the type of work you do. I think that is one of the things that is common among us vegetarians, that we do see animal flesh in the same way we see human flesh when it is cut open. (sorry for sounding disgusting there) But in our modern culture with all the animal flesh neatly cut and wrapped in styrofoam and shrinkwrapped, it helps remove people's minds from the reality of what it is they are actually eating. I think if people had to raise, slaughter, and cut up their own animals for food that they would eat a lot less of their flesh than is the current diet standard of this century. I know my grandmother lived that way, she said they only ate meat once a week and that was typically a chicken dinner on Sunday from one of the chickens they raised. As far as protein goes, it is very easy to get enough of it as a vegetarian. Most active women only need 45 grams of protien a day (most active men should get between 55 to 65 from what I have read on the subject) and many vegetarian meals will consist of 20 grams or more of protein. Just eat a variety of vegetables, beans and complex carbohydrates and you should be fine. If you still plan to eat eggs and some dairy it will be even less of a challenge.
