Guest guest Posted May 5, 2004 Report Share Posted May 5, 2004 This recipe makes a large amount, so if you are going to a potluck gathering or having guests over it is really a nice cool summery treat to serve with or after dinner. The leftovers don't last long in this house... Minted Melon Salad 1 cup water 3/4 cup sugar 3 Tbs lime juice 1 1/2 tsp chopped fresh mint Pinch of salt 5 cups cubed watermelon 1 medium canteloupe, cut into cubes 1 medium honeydew, cut into cubes 2 medium peaches, sliced 1 cup fresh or frozen blueberries In a small saucepan, combine the water, sugar, lime juice, mint and salt; bring to a boil. Boil for two minutes; remove from the heat. Cover and cool syrup completely. In a large bowl, combine watermelon, canteloupe, honeydew, peaches, and blueberries; add syrup and toss to coat. Cover and refrigerate for at least 2 hours, stirring occasionally. Drain before serving.
