Feel free to use whatever veggies you have on hand in it; I can't imagine anyone could flub it up as long as the veggies are fresh. I served it with toasty sliced bread and a spring greens salad. Easy Vegetable Pasta 2 Tbs. olive oil 1 leek, chopped 2 cups broccoli florets 1 cup cauliflower florets 1/2 cup sliced black olives 1 jar marinated artichoke hearts, drained and chopped 2 tbs. minced garlic 1 jar spaghetti sauce 16 oz. pasta, cooked and drained Parmesan cheese (optional) Heat olive oil in a wok or saute pan and stir-fry the leek, broccoli, and cauliflower for five minutes. Add the olives, artichoke hearts and garlic, stir to combine, then remove from heat and cover pan to allow the vegetables to steam together for ten minutes. Return pan to heat and add the sauce; heat until warmed through. Place pasta on a large serving plater and pour warm vegetable mixture over the top and toss to combine. Serve with Parmesan cheese for those who want it. Yield: 6 servings ~ PT ~ Don't look for help from someone other than yourself.
