Guest guest Posted April 10, 2004 Report Share Posted April 10, 2004 This isn’t really a recipe, because nothing was measured, etc. I had some tofu drained, frozen and thawed that I wanted to use up, and a package of “Tofu Mate” Mediterranian Style sauce mix I wanted to try. So, I cubed the tofu, sautéed it in a little olive oil, then added the sauce mix. It smelled delicious! I added a bunch of veggies to the pan – green beans, broccoli, orange bell pepper, sun dried tomatoes, garlic, zucchini, and pine nuts – in with the tofu and sauce, plus a touch of olive oil. While the veggies were cooking I made some penne pasta. I tossed the pasta with a touch of olive oil, added the veggies and tofu, and garnished with some freshly grated parmesan cheese. Success! It was delicious. The carnivoires in the house agreed that it was great, and no one missed the meat. I think I’m going to like these Tofu-Mate seasonings. -- Sherri At first there was nothing.
