Well, after all those helpful suggestions, I ended up using a gr. meat

analog, because that’s what I had available. I expect to continue

tweaking this recipe, and I’m sure I’ll use some of the suggestions

then. Thanks for the help :-)

 

Tamale Pie

 

1 small onion, diced

1 small green bell pepper, diced

½ cup jalapeno peppers, diced (this is approximate; I just diced up a

bunch from the jar in the fridge, didn’t measure them)

8 oz Gimme Lean (ground beef style)

1 can tomato sauce (15 oz)

1 can black beans, drained

1 pkg vegetarian taco seasoning

1 cup cornmeal

2 tsp sugar

½ tsp salt

1 egg, beaten

1/3 cup milk

2 tbsp vegetable oil

1 cup canned corn, drained

4 oz grated cheese (I used a Mexican blend)

 

Sautee the onions and peppers until tender. Add “meat”, and cook about

5 minutes more. Stir in beans, tomato sauce and taco seasoning mix.

Continue to simmer while you prepare the crust.

 

In a medium bowl combine cornmeal, sugar and salt. In a separate bowl

mix together the egg, milk, and oil. Add egg mixture to cornmeal

mixture and combine well. Stir in drained corn. (I added the rest of

the can to the filling mixture, or you could just use it all in the

crust.)

 

Press the cornmeal mixture into a lightly greased pie plate, like you

would do for a crumb crust. Spoon bean mixture into crust. Bake at 350

for 20 – 30 minutes. Sprinkle with cheese and bake an additional 5 – 10

minutes.

 

Let stand about 5 minutes before serving.

 

This was really good! The omnivores in the house gave it rave reviews.

The spiciness of the filling (I used a “hot” seasoning blend) was a nice

contrast to the slightly sweet cornbread crust. I think you could

easily add any combination of veggies to it, for additional texture and

flavour.

 

I think this recipe is going to be one that we make often around here,

in lots of variations.

This sounds so good, Sherri. Thanks for sharing your

success with the recipe here with all of us. I am going

to put this one in my weekly menu list to try out next

week. :)
