Guest guest Posted March 23, 2004 Report Share Posted March 23, 2004 Oh my gosh! This dish turned out so well, I'm actually surprised! I'm not sure what to call it, I feel like it needs a good name. Any suggestions? For now how about " Lentil bean spinach " Ingredients list: 1 c red lentils 1 can red kidney beans, well rinsed 1/2 sweet onion 1/2 zuccini package of frozen chopped spinach, thawed and well squeezed Qorn chik'n tenders curry powder cumin paprika black pepper 1 herb vegetable bouillon Add 1 cup red lentils to 3 cups boiling water. Cook until done and water is mostly absorbed (about 30 min) Meanwhile: Saute diced onion in your favorite oil (I used Peanut tonight). When just translucent add the zuccini and saute for about two minutes. Add curry powder, cumin powder, paprika and black pepper, to taste. Mix the onion and zuccini well with the spices. Then add the Quorn tenders. Cook until the tenders are thawed and heated through. Add 1/2 of the bouillon cube and some of the stock from the cooking lentils, combine well. (Drop the other 1/2 bouillon into the cooking lentils.)Then add the rinsed kidney beans and the spinach (you may not want to add all of the spinach). Gently stir the ingredients together, careful not to mash the kidney beans. When ready to serve, add the bean/spinach mixture into bowls and top with the red lentils. Can serve with Naan bread and a salad if desired. This was extremely filling and as I handed James his bowl " this looks very healthy! " And it is!
