Laura ----------- Spice Islands Banana-Date-Walnut Bread Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- cooking spray 2 cups unbleached white all-purpose flour or whole wheat pastry flour (plus a bit extra for the pans) 1 lemon -- grated rind and juice 3 extremely ripe, black-speckled bananas 1/4 cup mild vegetable oil, such as corn, canola, or peanut 1/2 cup brown sugar or Rapidura 3 tablespoons buttermilk or plain unflavored yogurt or plain soy yogurt 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 6-8 vigorous gratings fresh nutmeg 1/2 teaspoon ground cinnamon, preferably Saigon 1/2 cup pitted, chopped dates -- to 1 cup 3 tablespoons toasted walnuts -- chopped Preheat the oven to 375 degrees F. Select a pan or pans; either 1 large, 6 x 3 " loaf pan or 3 small, 5 x 2 " loaf pans. If they aren't nonstick, spray the pans thoroughly with cooking spray, then dust with a little flour, knocking out any excess. Place the lemon rind in a food processor along with the bananas. Pour the lemon juice over the bananas. Add the oil, brown sugar, and buttermilk and buzz to a smooth puree. Set aside. In a medium-large bowl, combine the flour, salt, baking powder, baking soda (if these ingredients are at all lumpy, sift them in), nutmeg, and cinnamon. set aside. Combine the dates and nuts in a small bowl. Remove 1 tablespoon of the flour mixture and sprinkle it over the dates. Toss well to coat. Pour the banana mixture into the flour mixture and stir to thoroughly combine, but don't overbeat. Stir in the dates and nuts, and turn the stiff batter out into the prepared pans. Cook for 40 to 50 minutes for the large pan, 30 to 40 minutes for the smalls. Let cool in the pans for 10 minutes, then turn out onto a wire rack to cool. There are so many recipes in there that I must try. I am definately going to do this one soon. I think you are right about the soy yogurt working fine in this.
