i made a half-gallon batch of rejuvelac lemonade (recipe from " vibrant living "

cookbook) the only difference i let it ferment 2 days instead of three. but

here's my twist. in that book there's also a recipe for " ginger ale " that calls

for making a ginger extract involving lemon juice. well, since the rejuvelac

has a somewhat lemony-tart taste anyway, I took a tall glass of rejuvelac (about

12 oz.) and the juice of a 1 to 2-inch piece of ginger (grate the ginger root

and squeeze through a seive or piece of cheesecloth) and added some stevia to

sweeten it. I got almost the exact same result as if I just followed the recipe

in " vibrant living " for ginger ade. either way, these are really great natural

ways for making ginger ale if you don't want the carbonation, or want soemthing

that's fresh without a lot of additives to it (schwepps anyone?).

I'll post the recipes for both later today. I'm getting ready for work at the

moment, and still have a # of emails to answer. :) Just thought I'd share with

you all though.
