The bf's " secret recipe " for chicken and peppers was easily adapted to my dietary preferences and turned out wonderfully - full of flavour, easy to make, and very " comforting " . " Chik'n " and Peppers 1 each red and yellow pepper, sliced into strips 1 medium onion, sliced 4 cloves of garlic, minced 1 can diced tomatoes, with juice 1 bag Quorn brand " chik'n " tenders (or brand of your choice) 2 vegetarian bullion cubes Oregano Italian seasoning Basil Sugar Olive oil Sautee peppers, onions and garlic in a bit of olive oil until onions are translucent. Add a can of diced tomatoes, including the juice. Season to taste with oregano, Italian seasoning, and basil. Add a pinch of sugar to cut the acid of the tomatoes. Crush and add 2 bullion cubes. Stir in the " chik'n " tenders. Cover and simmer at least 30 minutes (the longer it cooks, the better it tastes). Serve on it's own, or over pasta. I'd suggest adding a couple of shakes of hot sauce if you like a bit of heat; hot sauce is good for clearing a stuffy head I have found.
