BLACK BOTTOM BANANA BARS

(Yield: 2 1/2 dozen)

1/2 cup butter or margarine, softened

1 cup sugar

1 egg

1 teaspoon vanilla extract

1 1/2 cups mashed bananas

1 1/2 cups self-rising flour

1/4 cup cocoa powder

Preheat oven to 350°F.  Spray a 13x9-inch baking pan with non-stick

vegetable spray.

In a large mixing bowl, cream butter and sugar until light and

fluffy.  Add egg and vanilla; beat thoroughly.  Beat in bananas.

Add flour; mix well.

Divide the dough in half.  Add cocoa powder to one half; mix well.

Spread cocoa batter into prepared baking pan.  Spoon remaining batter

on top and swirl with a knife.

Bake for 25 minutes or until a tester inserted in the center comes out

clean.  Cool in pan on a wire rack.  Cut into bars.

Lori,

I'm not sure whether to thank you or curse you for this recipe. ;)

They're yummy! I'll have to take some into work so I don't end up

eating them all...
