Guest guest Posted February 20, 2004 Report Share Posted February 20, 2004 ITALIAN WONTONS Makes 24 1/2 cup finely shredded mozzarella cheese 1/4 cup snipped fresh basil 1/4 cup chopped walnuts 3 Tbsp oil packed dried tomatoes, drained, minced 2 Tbsp finely chopped pitted black olives 1 green onion, thinly sliced 24 wonton wrappers oil for deep frying 3/4 cup bottled marinara sauce Preheat oven to 300°. Combine first 6 ingredients in a small bowl. For each wonton, place one wrapper on a flat work surface, one corner pointing down. Spoon rounded teaspoon of filling just below center of wrapper. Fold bottom point over filling, then tuck under the filling. Roll once to cover filling, leaving 1-inch unrolled at top of wrapper; moisten right corner with water. Grasp right and left corners and bring them toward you below the filling. Overlap left corner over right corner; press firmly to seal. Heat 2-inches of oil to 365° in a heavy saucepan or deep fryer. Fry wontons, a few at a time, for 1 to 2 1/2 minutes or until golden brown. Drain on paper towels. Keep warm in a 300° oven while frying remainder. Heat marinara sauce.
