You can make the coconut milk by hand from fresh coconuts if you can find good ones and you like to do it the hard way. You can substitute soy milk for the evaporated milk if you are a vegan. And you can leave out the cream of coconut if you can't find it and use a can of sweetened condensed milk instead. Nothing is critical about the measurements and it's very easy. Sometimes I play around with the recipe by adding a little soy grits or polenta in place of some of the rice. If you like it your are going to be in love with it. In my experience, about half the members of any given family will be in love with it and the other half could care less. Enjoy!! Ohhh... and don't slurp too loud when eating it! lol.
