Guest guest Posted February 16, 2004 Report Share Posted February 16, 2004 Ingredients: 1 clove garlic 1 1/2 cups fresh vegetable of choice 3 oz. firm tofu 4 oz. tomato sauce, low sodium 1/4 tsp. Italian seasoning 1 tsp. oregano 1/4 tsp. crushed red pepper flakes 1/4 tbsp. olive oil Directions: Cook your pasta of choice such as elbow macaroni or penne, according to recipe, omit salt. Mince garlic, drain and chop tofu and vegetable into bite-sized pieces. Heat oil in a nonstick saucepan on medium-low heat and sauté garlic until just golden, about 2-3 minutes. Raise heat to medium, add tofu and vegetable and cook for 8-10 minutes, or until tofu is slightly golden in color. Stir in tomato sauce and spices, cover and cook until vegetables are tender, an additional 5-7 minutes, stirring occasionally. Add cooked pasta to sauce, heat through 1-2 minutes and serve.
