Guest guest Posted February 9, 2004 Report Share Posted February 9, 2004 CHEDDAR CRACKERS Makes 4 Dozen 2 cups shredded sharp cheddar cheese 1/2 cup butter (do not substitute) 1 1/2 cups flour 1/4 cup snipped fresh parsley 1/4 tsp salt 1/4 tsp cayenne pepper Combine shredded cheese and butter in large mixing bowl; bring to room temperature, about 30 min. Beat with electric mixer until combined. Stir in flour, parsley, salt and pepper. Divide dough in half; shape each half into a 7-inch log. Wrap and chill logs at least 1 hour. Preheat oven to 350°. Using a knife or crinkle cutter, cut the logs into 1/4-inch slices. Place slices on ungreased cookie sheets. Bake for 15 min. Cool on a wire rack. Store in a tightly covered container in the refrigerator up to 3 days or in the freezer for up to 6 months. Bring to room temperature before serving.
