I would also suggest that you can find out a lot of useful information from many of the popular vegetarian cookbooks. Linda McCartney's cookbooks contain some nice, simply worded information on nutrition and what fruits and vegetables contain which nutrients. New vegans, and even new lacto-ovo or other types of vegetarians, are often concerned about getting it right and not falling short on protein, vitamins, and minerals. While it is a good thing to be aware, we needn't become overly concerned or worried about our diets lacking nutrients if we eat a little bit of everything, and eat healthy organic foods. Try to avoid as much processed junkfood as you can, eat some grains, beans, tofu, colorful veggies, and you will be on the road to healthy way ahead of the meat-eating crowd. Toss into that mix a nice multivitamin and you're golden.
