Guest guest Posted February 4, 2004 Report Share Posted February 4, 2004 I made this for dinner last nite (with leftovers for lunch today) and it was a perfect " Wintry Mix " meal - warm and hearty. To make it vegan, just sub out the dairy for soy/rice/other analogs. But don't use Vanilla soymilk - I learned that the hard way. 3 Tbsp butter 1 cup flour 2 cups milk 1/4 cup green onions, chopped 1/4 parmesan cheese 1 box frozen chopped brocolli (slighty thawed) 2 cups Quorn pieces 1 package vegetable soup mix 1/8 tsp ground pepper Pastry dough or pie dough to top Pre-heat oven to 400 degrees. Over low heat, melt butter. Add flour and green onions, stir until flour begins to bubble. Add milk, parmesan, and soup mix. Stir 5 minutes. Add brocolli, Quorn, and pepper. Stir until brocolli and Quorn are heated through. Stir into 1-quart round dish. Top with dough, cutting small slits to let the air escape. Cook 30 minutes or until bubbling and golden brown. (I would line the oven rack w/ foil to make sure it doesn't bubble onto the oven floor and bake on.) Quote Link to comment Share on other sites More sharing options...
