Thanks! > hi rms-- well, for me, giving it up was very easy when i learned the realities behind the production of dairy and eggs. when you believe in something enough, the conversion is not hard at all. i'm not sure what your reasons are for going vegan, though, so i'll give you the following advice: you're never going to think vegan cheese is " real' cheese -- it just can't pass for the real deal (with the exception of veggie parm-- it's surprisingly like the real thing!). however, the " follow your heart " brand melts nicely and tastes good, and that's generally the brand i'll use when i'm looking for the next best thing to cheese. broil it on the top rack of the oven for successful melting. i highly recommend buying joanne stepinak's " uncheese cookbook " for other great cheese-like ideas. hope this helps! melody http://www.melodysmusic.net Quote Link to comment Share on other sites More sharing options...
