Guest guest
I don't know why I've never made hummus before. Perhaps because it's always so readily available in the supermarket. Well, after this weekend, I can't imagine I'll ever buy it again. Homemade hummus is so simple and tastes so much better! It took all of 5 minutes to prepare. This was the first thing to vanish at the party we had this weekend, and got rave reviews (we had raw veggies to dip in it, as well as a variety of small pita breads). I made another batch this week with roasted red peppers in it - yummmmmm. Hummus: 1 can chick peas, rinsed and drained 3 tbsp tahini 2 -3 tsp garlic, minced 2 lemons salt to taste warm water olive oil cayenne pepper In a food processor combine chick peas, tahini and garlic. Squeeze in the juice from the lemons (you may only want one, depending on your taste preferences. I like it a little tangy.) Add warm water until it's the consistency you like - I like it light and fluffy. Taste and add salt if needed (some canned beans are already very salty, so you may not need to add any). Spoon it into a serving dish, sprinkle on cayenne pepper, and drizzle with olive oil. Serve as a dip for fresh veggies, or use as a spread on breads, etc. This would be great at a superbowl party! You can also add things like roasted red peppers, roasted eggplant, or a variety of spices to change the flavour of this basic recipe -- Sherri " Every jumbled pile of person has a thinking part that wonders what the part that isn't thinking isn't thinking of " - They Might Be Giants
