Guest guest Posted January 22, 2004 Report Share Posted January 22, 2004 I'm cooking a Lentil Loaf for dinner tomorrow night (Lentil Loaf is always better if it sits overnight before serving). Anyway, I cooked a few too many lentils and a bit much wild rice, so I threw this together: QUICK LENTIL SOUP (all measurements are approximate) 1 cup cooked lentils (any color) 3/4 cups cooked wild rice (or brown and wild rice mixture) 1 cup dried veggie soup mix (I got mine out of the bulk bin at Winco) 3 cups or so of veggie broth (I used Pacific brand) Mix all ingredients in a large sauce pan, bring to a boil and reduce heat to simmer until dehydrated veggies reconstitute. If you have leftover cooked rice and lentils, this takes about 15 minutes to prepare, including cooking time, and it is very filling and tasty. Great comfort food.
