That's because they insist upon such stringent and multiple clinical testings of the foods on real people and how real people metabolize things. They then arrive at an average that is, in scientific parlance, robust, meaning that it's pretty damned solid. The other thing that makes adding to their list such a slow process is that they test specific foods, down to brand, label, and even country of origin. (Example: Oatmeal varies country to country due to how it's made. ) What the larger books give one is explanation of the process and reasons. interesting, but not entirely necessary. The pocket guides, (the one for Diabetes is recommended to everyone, too, by the way), are a concise overview and reference source you can consult when needed. Very handy.
