They do contain a bit of a milk bi-product (casein), but are mostly made of soy milk. I purchased the pepper jack flavor. The serving size on the package states it is 1 and 1/2 of a wrapped slice. It is only 60 calories per serving. 3g fat, (saturated fat 0g, monosat fat 2g, polyunsat fat 1g), cholesterol 0mg, sodium 390mg, total carb 1g, dietary fiber 0g, sugars 0g, lactose 0g, protein 6g. It has quite a few vitamins, too; looks to be a good source of vitamins B6 and B12.
