miso soup (recipe)

i made this soup tonight. it was so good and fast.

it took me less than five minutes from start to

finish. the only change i made was that i added a

handful of fresh baby spinach along with the tofu.

 

MISO SOUP

 

2 c. vegetable broth

2 c. hot water

4 tablespoons miso

1 t. fresh ginger root, grated (optional)

1/2 cup diced firm tofu

3 tablespoons thinly sliced scallion greens

1/2 cup thinly sliced mushrooms

 

Pour the vegetable broth and one cup of the hot water

into a medium saucepan.

 

In a separate bowl, dissolve the miso in the remaining

one cup hot water. Mix well, and then add to the

contents of the saucepan.

 

Add the ginger root (if desired) and mushrooms and

heat until simmering, about 5 minutes.

 

Remove from the heat and stir in the tofu and scallion

greens. Serve.

I am new to this list and new to eating vegetarian. Could you tell me what

Miso is?

hi melissa,

 

miso is a fermented soybean paste that's japanese in

origin. there are several types of miso. white and

yellow misos are the mildest.

 

you can get miso at health food stores or asian

markets.

FYI : Here in Hawaii you can buy miso at any grocery store -- like Safeway...

common ingredient in everyone's diet -- not just a vegetarian item. Most

non-veggs eat it with a little sprinkle of fish flakes.

hi phil,

that's cool that you can get miso at any grocery store

there in hawaii. i had the hardest time finding it

where i am in virginia.

i'm curious about the local food there in hawaii. do

you have any great vegetaritarian recipes that

represent the region?
