A crockpot is a sort of electric slow cooker.

It looks like a soup pot, and you plug it in on

your counter top, add the ingredients, turn it on,

and it cooks all day on a very low setting.

They are great for making soups, stews, and

cooking dried beans. They are wonderful for days

when you don't have time to be home to fix dinner,

but want something ready to eat when you do arrive

back home at dinner time.

Turbinado sugar, or sugar in the raw, is just a less processed

form of sugar. I prefer the flavor. You can usually find it in

bulk bins at healthfood stores or markets.

If you cannot find this form of sugar you can use whatever

you have. I just put some in this dish to cut the acidity of

the tomatoes. If you would prefer to cook sugar-free, you can

add some carrots to the soup.
