I found the idea for it in that Simply Heavenly cookbook put out by those vegan monks, and then adapted it for the crockpot and used canned tomatoes instead of fresh. Here is what I came up with. Give it a try. We ate this with hotdogs; I found and tried the Quorn brand hotdogs and they were alright. I still think I prefer the Worthington ones that come in a can for overall texture and taste, but I typically don't eat hotdogs and instead eat Boca brats. Lentil and Tomato Soup 1/2 cup lentils, dry 1/2 tsp dried minced garlic 2 cans (14.5 oz) diced tomatoes, undrained 1 cup tomato juice* 3 1/2 cups vegetable broth 1/4 tsp salt 2 Tbs turbinado sugar 1/4 tsp cayenne pepper 1 medium onion, finely chopped 1 Tbs olive oil Put the lentils, garlic, tomatoes, juice, broth, salt, sugar and cayenne pepper in crockpot, and turn on low. Saute the chopped onion in the olive oil until soft and then add this mixture to the crockpot. Allow it to cook until lentils are tender. Add some more seasonings and spices if desired.
