[recipe] Potato-Leek Soup

My eldest had rather painful dental surgery yesterday

in preparation for the dreaded braces, so I fixed this

wonderful soup for her dinner. Everyone loved it; even

my veggie hating son. I used the recipe I found in Molly

Katzen's Enchanted Broccoli Forest, and this is what I came

up with. I think it would be good with some chunks of veggies

left, so next time I might just puree half of it.

 

Potato-Leek Soup

 

4 medium potatoes, cut into 1 inch chunks

4 leeks, cleaned and chopped

2 stalks celery, chopped

1 large carrot, chopped

4 Tbs butter or margarine

3/4 tsp salt

1 1/2 cups vegetable broth

2 cups milk

Pinch of basil, garlic powder and marjoram

Fresh cracked pepper

 

Put the potatoes, leeks, celery, carrot and butter in a

saute pan. Add the salt and cook over medium heat

until the butter is melted and combined with the

vegetables. Put this mixture along with the vegetable

stock in a crockpot. Cook on low for three hours or

until the vegetables are soft. Puree in small batches

on a food processor or blender, or use a hand-held

blender. Transfer to a soup pot and slowly whisk in

the milk until blended. Heat on low and add the herbs,

pepper and taste to see if it needs more salt.

Gently heat it and be sure not to let it boil.

Serve right away.

Yield: 4 to 6 servings

Did you have to puree the soup? Ugh, braces. I've never had them,

but they don't sound like fun. I do know when my wisdom teeth were

pulled, pureed food sounded really good to me!
