Guest guest Posted January 2, 2004 Report Share Posted January 2, 2004 This is a recipe I found on a crockpot cooking list a while back and thought I would adapt it to fit a vegetarian menu. The original poster of this recipe used meat products, but I thought the Boca vegetarian smoked sausages would work in it fine, and they did. It is a very easy meal to make for busy days. Red Beans and Rice 3 cups water 1 cup dried red kidney beans 1 cup chopped onion 1 cup chopped green bell pepper 3/4 cup chopped celery 1 teaspoon dried thyme 1 teaspoon paprika 3/4 teaspoon ground red pepper 1/2 teaspoon black pepper 1 (10-ounce) package veggie smoked sausage, thinly sliced 1 bay leaf 5 garlic cloves, minced 1/2 teaspoon salt 3 cups hot cooked rice 1/4 cup chopped green onions Combine first 12 ingredients in an slow cooker. Cover with lid; cook on high heat for 5 hours. Discard bay leaf; stir in salt. Everywhere I shop was out of Vegan sausages this week, so I used Fakin' Bacon (smoked tempeh strips) instead. I think I'll make it that way every time, because I prefer the smoky flavor without the kind of weird, spongy veggie sausage texture. In any case, this was totally delicious, and I can't wait for my struggling-to-be-veggie husband to come home from job training so I can make it for him, because I know he'll love it too.
