Guest guest Posted December 29, 2003 Report Share Posted December 29, 2003 This isn't so much a recipe as it is something I enjoy fixing for a quick lunch every once in a while. I always enjoyed the ramen noodle soups, but often times even the vegetarian appearing flavors contain meat bi-products in the seasoning packets. So I came up with this way of eating them that avoids using the packets, but still gives me a delicious vegan lunch that is both easy to prepare and filling. I place about 1 and 1/2 cups of water in a small soup pan and then add one vegetarian spoonful of vegetarian broth powder; bring this to a good boil. Add the ramen noodles to the boiling brew and throw the icky meat-laden seasoning packet in the rubbish! Toss in a few pinches of shredded cabbage or cole slaw mix, if you have it, and a few dashes of hot pepper sauce (to taste). Allow to cook until noodles begin to get soft and the cabbage is crisp-tender. Add one tablespoon of natural peanut butter to the soup and toss to allow it to melt and coat the noodles while it thickens into a nice smooth sauce.
