Guest guest Posted December 24, 2003 Report Share Posted December 24, 2003 These are a delicious (though not low fat) munchie/appetizer or meal accompaniment. Kids usually like them too. Spinach Balls 1 lb. (16 oz. bag) frozen chopped spinach, cooked & squeezed dry 1 medium onion, chopped fine 4 beaten eggs 3/4 cup melted butter/margarine 1/2 tsp garlic powder 1/2 cup grated parmesan 2 cups seasoned stuffing crumbs Set oven to 350. Mix all ingredients together in bowl & chill for an hour or so, until somewhat stiff. Form into balls. Bake on cookie sheet 10 minutes, turn balls over & bake another 10 minutes. (Can be mixed, frozen and baked later.) My notes: Be sure to read the ingredients when buying prepared stuffing crumbs, as some contain beef/chicken byproducts. Soy parmesan substitute works fine.
