Guest guest Posted December 21, 2003 Report Share Posted December 21, 2003 This is really delicious and has a very festive holiday look with the greens, cranberries, fruits and nutmeats. You can easily just skip the shredded Swiss cheese if vegan; I'd suggest just replacing that with some colorful shredded carrot. Hope everyone is enjoying this holiday season! Festive Yule Salad 1/2 cup sugar 1/3 cup red wine vinegar 2 Tbs lemon juice 2 Tbs finely chopped onion 1/2 tsp salt 2/3 cup olive oil 3 tsp poppy seeds 10 cups torn romaine 1 cup shredded Swiss cheese 1 medium tart apple, cored and cubed 1 medium pear, cored and cubed 1/4 cup dried cranberries 1/2 to 1 cup chopped nuts (cashews, pecans, or walnuts) In a blender or food processor, combine the sugar, vinegar, lemon juice, onion and salt. Cover and process until blended. With blender running, grdually add oil. Add poppyseeds and stir in. In a salad bowl, combine the romaine, Swiss cheese, apple, pear and cranberries. Drizzle with desired amount of dressing. Add nuts and toss to coat. Serve immediately.
