Guest guest Posted December 16, 2003 Report Share Posted December 16, 2003 i made this for dinner tonight. it turned out better than i expected and i will most certainly make it again. the fresh lime juice really brightened the flavor. Spicy Posole Soup 1 T. oil 1 medium onion, chopped 6 medium cloves garlic, chopped 6 cups vegetable broth 2 T. fresh lime juice 3 cups kale rinsed and chopped fine (remove stems) 2 15 oz. cans hominy, drained 15 oz. can diced tomatoes 1 - 4 jalapenos, seeded and minced 1 medium zucchini, chopped 3 T. chopped fresh cilantro salt and pepper to taste Heat 1 T. oil in medium sized soup pot. Sauté onion in oil over medium heat, stirring frequently, until translucent. Add garlic and continue to sauté for another minute. Add remaining ingredients except zucchini and cilantro. Bring to a boil on high heat. Once it comes to a boil, reduce heat to medium low and simmer for 15 minutes, uncovered. Add zucchini the last 7 minutes of cooking.
