Thanks, PT. That's what I needed to know. Sounds like a winner ;=)

(And no, I wouldn't make gluten/seitan from scratch either - even if it

were unavailable - anymore than I would make tofu from scratch. But I do

like books that let you do more than just add a can of this and a jar of

that ;=))
