Anyways I was reading this thread and it made me think of a funny holday story about a tofu-hater, my sister-in-law. A couple years ago I made a a tray of Spinach and Tofu patties (recipe to follow) to take to our usual family Christmas party. I made mini-patties, with a bowl of marinara sauce for dipping. I didn't tell anyone what they were, just put them on the table. As we were standing around munching, somehow (as always) the subject turned to a discussion on vegetarian foods (we're the only oddball vegetarians in the family). Now if you can just picture my sister-in-law... She is a large (at least 350 lbs on the hoof) woman with a big mouth to match. I definately would not like to have her grocery bill. Here's sort of how it went: " TOFU?? Oh, I REALLY hate that stuff, it's SO gross.. " (Chomp, chomp, gulps down another tofu patty and grabs another) " I think it tastes like rubber " (chomp, chomp smack, crumbs falling out of mouth as she talks while eating) " HOW could anyone eat that stuff anyways " (chomp, smack, slurp) Within about 10 minutes she had cleared nearly half of the tray!! My husband and I just smiled at each other, and now it's a funny holiday memory that we both share. Anyways here's the recipe, if you're looking for an idea for a " munchie " for a potluck. I don't remember if I posted it before and I'm too lazy to go search. My 6-yr old likes these. Italian Tofu and Spinach Patties (From Vegetarian Times) 1 package prewashed (10 ounces) ready-to-eat spinach 1 pound tofu, well-drained & crumbled 1 cup grated mozzarella cheese 1/4 cup grated Parmesan cheese 2 garlic cloves minced 1/4 teaspoon ground nutmeg 2 cups dry bread crumbs 3 tablespoons olive oil 2 cups your favorite spaghetti/marinara sauce Makes about a dozen large patties Rinse spinach, shake off excess water and wilt in a large saucepan over high heat. Remove from pot and drain thoroughly. Chop coarsely. In a large bowl, mix the tofu, spinach, cheese, garlic, salt, pepper and nutmeg. Shape the mixture into 8 equal-size patties. Dip each patty in bread crumbs. In a medium skillet, heat the olive oil over medium heat. Cook the patties until golden, 3 to 4 minutes per side. Serve in pool of Marinara sauce. My notes: Soy cheese works fine. If patties seem too soft and fall apart while frying, mix in a handful of breadcrumbs for easier handling. cheryll Quote Link to comment Share on other sites More sharing options...

You mean to tell me you and your hisband didn't tell that cowan sil what she was eating eventually? I don't thik I would have been able to stand keeping quiet! *lol* That recipe looks yummy!
