Guest guest Posted December 13, 2003 Report Share Posted December 13, 2003 Vegan Cornbread between 1 1/4-1/2 cups Yellow Self-Rising Corn Meal 1/8 cup Self-Rising Flour a little more than 1 1/4 cup soymilk* 1 1/2 T. Vegetable Oil pinch of salt Preheat oven to 400 degrees. Combine dry ingredients. Mix well the dry ingredients with soymilk, beating out any lumps. Stir in the vegetable oil. Liberally grease an 8x8 casserole dish/iron skillet with white Crisco or spray Pam. Bake for 35 minutes. *Regular milk or lactaid milk can be substituted for the soymilk, they all turn out fine. When using a milk other than soymilk, reduce cook time to 30 minutes.
