[recipe] Italian Sausage Casserole

I threw this together for our dinner last night, so the

measurements aren't exact, but close enough so

you'd be able to cobble it together in a similar fashion

if it sounds appealing.

 

Italian Sausage Casserole

 

1 Tbs olive oil

1 medium onion, chopped

1 Tbs minced garlic

1 tsp dried Italian seasoning

1 tsp dried basil

 

*Heat oil in a medium pan and saute the onion until soft.

Add the seasonings towards the end of this, just to heat

and release flavors. Remove to a bowl with a slotted spoon.

In the same pan add:

 

A little more olive oil (if needed)

3 sliced Boca Italian sausages (or veggie brand you like)

1 jar spaghetti sauce ( I used a jar of frozen homemade)

4 cups rotini pasta, cooked and drained

1 cup shredded cheddar cheese

 

*Brown the sausages a bit in the oil, then add the jar of

sauce and the onion mixture. Allow this to simmer a few

minutes and then stir in the cooked rotini pasta. Heat oven

to 350 degrees, and prepare a casserole pan by spraying

it with non-stick cooking spray. Spoon half of the pasta mixture

into the casserole and top with half of the shredded cheese;

repeat once more. Bake covered for 25 minutes or until cheese

is melted and pasta is bubbly.

Yield: 5 servings
