Are there any general guidelines for feeding a vegetarian diet to someone with diabetes? I ask b/c we've pretty much converted Thomas's father into a vegetarain over the past few months. I'd also be very interested. My elderly mother (84) is diabetic, managed from diet not insulin. She says she has to eat meat because she needs the protein.
