Guest guest Posted November 28, 2003 Report Share Posted November 28, 2003 Squash Casserole 3 yellow squash 1/2 small onion finely minced Bread crumbs from 3 pieces of loaf bread approximately 5 oz shredded sharp cheddar cheese 1/4 c. butter or margarine 1 egg or preferably egg substitute Milk - little less than 2 c. salt & pepper Cut squash into thin slices. Butter 1 1/2-quart casserole dish. Start a layer with squash; sprinkle with cheese, bits of butter/margarine and bread crumbs. Make 3 layers. Don't put bread crumbs on the top layer. Mix/Beat egg and milk. Slowly pour liquid over entire casserole. Dot with butter/margarine. Bake at 350 degrees for 1 hour. Half way through baking, remove casserole from oven and sprinkle remaining bread crumbs on top and dot with butter. *Preferably make your own bread crumbs. Bread crumbs from a bag can be used. I saw a friend on another list, who is from the south, telling of her squash casserole. It was very similar to this, but your version was way healthier and from the prep-notes I bet it tastes better. I wanted to ask though, is this sort of casserole a traditional southern squash dish for the holidays? I was raised in the north and typically we had as our squash dish a mashed orange squash, like an acorn puree. Anyway, just curious as I have never seen a recipe like this mentioned in relation to a holiday meal and ths week I have seen it twice. I definately must try it soon. Guest guest Posted November 29, 2003 Report Share Posted November 29, 2003 Yeah, it was wonderful day and evening. Squash casserole is usually on the table for Thanksgiving & Xmas. I've always found it to be strange that I've never been to a family thang where Butternut squash or acorn squash was served in any form. I guess b/c sweet potato casserole is always present. Many people boil or saute the squash first and then push it through a colander or mash it up before putting it into a casserole. I prefer to 'see' the pieces of squash. You can use crackers instead of bread crumbs. I always have bread crumbs and croutons around b/c that's how I make use of stale bread. I really enjoyed your Turkey story. There are a few around where we live now. Their little ones are cute too.
